1 Pack Simply Delish Keto Orange Jello Dessert
1 Pack Simply Delish Keto Peach Jello Dessert
1 Can Let's Do...Organic Organic Heavy Coconut Cream
Candy Corn for topping (Exclude for Keto*)
4 Clear plastic cups
Directions
For the whipped cream (Prep the night before):
1. Leave a can of heavy coconut cream in the refrigerator overnight.
2. The next day, scoop the solid part of the cream into a cold mixing bowl and mix it with a chilled hand mixer until no clumps remain (Note: If you want a lighter texture for the whipped cream, add a small amount of the liquid from the can as you mix).
For the yellow bottom layer:
1. Pour 1/3 cup of cold water into a pot and then add a full packet of peach jello. Stir until it is fully dissolved and then add 1â…“ cup of boiling water.
2. After stirring mixture in the boiling water, pour mixture into one of the plastic cups and allow it to cool at room temperature.
3. After the jello has cooled, place it in the refrigerator for 60 minutes to allow the jello to set.
For the orange middle layer:
1. Pour 1/3 cup of cold water into a pot and then add a full packet of orange jello. Stir until it is fully dissolved and then add 1â…“ cup of boiling water.
2.After stirring the mixture in the boiling water, pour mixture into one of the plastic cups (overtop of the peach layer) and allow it to cool at room temperature.
3. After the jello has cooled, place it in the refrigerator for 60 minutes to allow the jello to set.
Finishing touches:
1. Add a dollop of your previously prepared whipped coconut cream to the top of each jello cup and decorate with candy corn* (or your favourite keto-friendly candy). No need to wait as they are ready to be enjoyed right away!
