Makes 24 energy bites
Ingredients
8 Medjool dates, pitted
¾ cup Creamy peanut butter
4 tablespoons melted Coconut oil
½ teaspoon Pure vanilla extract
1 cup Gluten-free rolled oats
1 cup Bob’s Red Mill Buckwheat Groats
½ cup Unsweetened coconut flakes
¼ teaspoon Sea salt
1-2 tablespoons Water
½ cup Vegan chocolate chips
Instructions
1. Add the dates, peanut butter, coconut oil, and vanilla to a food processor. Process until a smooth paste is formed.
2. Add the oats, groats, coconut flakes, and salt. pulse 4-5 times, until just combined and still chunky. If the mixture is not quite sticking together, add 1-2 tablespoons of water and pulse 2-3 times. Using a spatula, transfer the mixture to a bowl, and add the chocolate chips. Fold in the chocolate chips.
3. Scoop out heaping tablespoon portions with a spoon or cookie scoop. Roll into balls in the palms of your hands, and transfer to a parchment paper-lined cookie sheet. Once all the energy bites are rolled, set in the fridge to set for at least 30 minutes or until firm before transferring to a storage container.
4. Store in the refrigerator for up to 1 week, or in the freezer for up to 1 month.
