Vegetarian, High Protein, High FiberÂ

Ingredients
1 Cup Flourish Buttermilk Pancake Mix
¾ Cup water
3 Bananas, cut into ½ inch slices (see note*)
½ Teaspoon cinnamon
¼ Cup mini chocolate chips
Avocado oil spray or butter, for cooking
Maple Syrup or Honey, for serving

Directions
1. In a small bowl, combine the pancake mix with water. Mix well, until thickened and smooth. Sprinkle the banana slices evenly with cinnamon and press 3-4 mini chocolate
chips into each banana slice.
2. Over medium heat, spray a nonstick skillet with avocado spray or lightly grease with butter. Alternatively, you can use a pancake griddle if available.
3. Use a wooden skewer to dip the banana slices into the pancake batter, then transfer to the pan. Cook until golden brown on both sides, about 1 minute per side.
4. Serve warm with a drizzle of maple syrup or honey.

*Note: These pancakes work best if the banana is slightly underripe. The texture will be more firm, and not mushy after being cooked.
