Grilled chicken wraps are easily made keto-friendly using swiss chard leaves and delicious Cucina & Amore Pesto! Make sure to buy Swiss chard leaves that are large enough to add fillings, or substitute with collard green leaves.

Serves 4
Ingredients
2 skinless, boneless Chicken breasts
1 tablespoon Avocado oil
¼ cup keto-friendly Barbeque sauce
1 Zucchini, sliced lengthwise
1 small Red pepper, seeded, and cut into wedges
2 thick slices Red onion
1 pint Cherry tomatoes, skewered
4 large Swiss Chard leaves, washed and dried
8 tablespoons Cucina & Amore Pesto
Fresh chopped cilantro (optional)
Instructions
1. Preheat the grill to medium-high heat. Butterfly each chicken breast by cutting it lengthwise through the thickest side of the breast. Lightly brush the chicken with oil, then the sliced vegetables, and skewered tomatoes. Season generously with salt and pepper.
2. Grill both the vegetables and the chicken until vegetables are lightly charred and chicken is cooked through (approximately 4-5 minutes per side for the chicken). Brush each side of the chicken breast with BBQ sauce. Remove the vegetables and chicken from the grill and set them aside to rest for 6-8 minutes. Slice the chicken into thin strips.
3. To prepare the swiss chard, using a sharp paring knife, shave off the fibrous stem from the centre of the swiss chard. Lay flat on a clean surface. Spread 2 heaping tablespoons of the pesto onto the swiss chard, then add the grilled chicken, vegetables, and tomatoes. Add cilantro or any fresh herbs you like, if desired. Fold in the sides, and roll up like a burrito. Secure with a toothpick, and place the seam side down. Repeat with the remaining wraps. Enjoy immediately, or shortly after preparing.
